White Bean Chicken Chili in bowl with spoon

This white bean chicken chili is loaded with juicy chunks of chicken, sweet corn kernels, and creamy white beans. It's a quick and easy one-pot recipe that's made without cream cheese, just a lip smacking broth that has a nice kick of heat to it.

Baked Cod with Roasted Tomato & Corn Salsa & Creamy Cilantro Sauce

With corn and tomato season in full swing I’m back with another easy and delicious recipe highlighting my favorite summer veggies. And who doesn’t love a simple baked cod recipe? This meal comes together rather quickly after you prep your ingredients. It’s flavorful and one of those meals that I hope you come back to year after year as the late summer season bounty is abundant.

The creamy cilantro sauce is so good it’s almost drinkable. You’ll find many uses for it after you make this. And the corn and tomato salsa would be great with any grilled meat or served with chips and salsa. Have fun with it!

Happy tomato and corn season everyone!

Smoky Summer Corn Quinoa Salad with BBQ Tahini Sauce

Folks! This summer salad is a MUST make! Featuring all of my favorite summertime veggies like fresh corn, vine ripened tomatoes, green beans and lots of fresh cilantro. The whole bowl is drizzled in my new favorite tahini bbq sauce. This sauce is chock full of flavor and the texture is amazing. I’m thinking we make bbq chicken next with this sauce. Anyhow, we drizzled it over this salad which is so hearty and wholesome that it can be a complete meal.

I hope you all love this salad as much as we do. It’s going on rotation for the next month while all of these veggies are still cranking at our farm.

Lamb, Eggplant & Tomato Stew

This is my kind of summer stew. The combination of Middle Easter spices with homegrown ingredients like eggplant, tomatoes and local lamb make for one heck of a mid summer meal! The warming spices of cumin, coriander, cinnamon, and allspice come together to coat lamb stew meat, zucchini, eggplant, tomatoes and chickpeas. The end result is a rich and comforting stew that the whole family will love. Serve this with some crusty bread and a side of rice, a healthy dollop of yogurt, plenty of parsley and fresh lemon for a perfect mid summer meal.
